En una olla de unos 24cm se echa el aceite, que cubra la base de la olla, cuando esta empezando a calentarse, echamos los ajos cortado en dados pequeños, los dejamos a fuego medio y añadimos las cebollas cortadas en trozos grandes. Removemos y a continuación echamos los pimientos, el tomate (cortados en trozos grandes, como en la foto) y agregamos el comino, la sal y la pimienta. Removemos y dejamos que se haga lentamente.
  2. Cuando ya estén todas las verduras pochadas añadimos el medio bote de zanahorias, la lata de maíz y las alubias negras. Removemos todo bien y lo dejamos un par de minutos. A continuación añadimos el chili en polvo y el tomate frito, removemos bien y enjuaga Mos el bote con agua y se la añadimos al guiso. (Como 250ml de agua, un vaso). Dejamos que se cocine a fuego medio durante unos 20 min.
  3. Se sirve calentito, con cilantro fresco y tortitas de maíz! Está buenísimo y súper nutritiva!! Es una comida estupenda para niños y para invitar a amigos a casa, se puede tomar como aperitivo y a la vista se agradece tanto colorido!!
